
How exciting, people! Our first recipe bake-along for Martha Stewart's Cupcakes Club! As the coordinator of the club, I had the liberty to choose the first recipe. . . Chocolate Salted-Caramel Cupcakes on page 148. Doesn't that sound good? Everything about it looked appealing, so it was an obvious choice for me.

The original recipe yielded 56 minis, but I cut it back to make 12 standard cupcakes (a half cup less here and there) and halved the Dark Frosting as well. The cupcakes baked perfectly at 15 minutes and I cooled it for 10.
Using a paring knife, I cut a cone-shaped piece from each cupcake and spooned 2 teaspoons of the caramel with a pinch of the sea salt. Because I made standard cupcakes, the caramel would disappear quickly, and never to reappear again as it soaked throughout the cupcake. Note to self, this would work better with minis and not standards. Ha!

I made the Dark Frosting and it was nice and shiny. I piped and garnished with the sea salt. You can't see it here since it "melted" into the frosting.
Verdict?
I liked it, it was different with the caramel and the salt. Ryan, on the other hand, commented that it was "too rich" and did not take another bite. He is chocolate fighter, not a chocolate lover. I will pass these along to the guinea pigs at work.

Yum- great pick and great job on it. I had seen another person talk about the caramel melting into the cake. These were quite rich, which is why I was thinking they were made into mini-s.

My caramel had stayed put, but then again, I was heating it as I was putting it in so it might have cooled as soon as it got into the cupcake? Maybe my cupcake was a bit denser than yours? Who knows!
I made big ones too, but I kept adding the caramel. Great pick for the first recipe. You rock. I got down about two bites but the hubby went back for a second.

You made an excellent choice. Rich? Yes, and totally worth it. I loved the caramel most of all. When I make caramel, I usually don't add that much salt. I was skeptical I would even be able to eat it, but it was AMAZING!! So glad to be part of the baking group.
Is membership still open? Don't answer 'cos I don't need to join another baking group. I do need to buy the MS cupcake book, though, these look too good!
Excellent choice...and yours look divine. I will remember the tip about using the caramel in regular-sized cupcakes, since that's what I plan to make as well.
Here's the part where I say "mea culpa" but a badly timed onset of summer cold kept me from making these...but I will, ASAP, I promise! Bad cupcaker, me! Thank you for coordinating this group!

These were a bit hit with my guys. I had to leave the salt off the top (although I should have done it on one of them for the photo) b/c guys don't like idea of salt on cupcakes...LOL. I learned a lot this week, so thanks for picking a recipe that gave me the opportunity to do that. Your cupcakes look lovely and I appreciate having the knowledge about the full-size version.

Thanks for hosting this week Betty! I really enjoyed these! I was glad, however, that they were minis because they were so rich! Yours look awesome - you piped the frosting beautifully.
Your cupcakes look beautiful! I also made "standard" cupcakes rather than minis and wondered when I could stop filling them with the caramel...they were like bottomless pits. Overall, I was happy with mine.
Yay...next pick is what I was planning to make for my book club this upcoming week so I'll actually be done early this go-round.

The club is a wonderful idea. I don't have the book but I will see if this is the time to buy it. It is fun to make cupcakes and once a month is a workable commitment.

Your cakes look stunning Betty!! Glad you got a tasty result with the caramel, even if it did soak in a bit - that sounds delicious to me actually, haha.. And your frosting job is beautiful, as always! I'm still working on the ol' piping skills, can't quite figure out how to get a smooth tip.. always end up with a jagged one.. but luckily I'll get to practice every month now!! HELP!!!!! I am not a member of your baking group - yet- but am seriously thinking about joining the fun!! Until then - I am looking for some input - I have been asked to think about some ideas for cupcakes for an acquantainance. She is throwing her daughter a "going away party" to celebrate a one-year study program in France (do you ever curse the gene pool?!?!?!?!? LOL) Anyways - the mom is asking for a "French theme" and I am stumped. One thing that has come to mind is something like a vanilla cupcake with a mass of frosting and a macaroon placed in the frosting....... Any suggestions would be very much appreciated!!!!! Thanks and happy baking!!!!!!!
